Why has France always been so passionate about cooking and excellent food? Since the reign of King Louis XIV in the middle of the 1600s, the French territory has always been wealthy, and people there emerged from a period of poverty and a rural lifestyle more quickly than in other European nations. The emerging upper class began to cherish good dining and cuisine, hiring professional cooks for events and daily life, and eventually opening up a true school for chefs to train young people for what would have otherwise been a regular employment.
