Ramen is regarded as one of the most classic and traditional Japanese foods. Despite popular assumption, it was only roughly 150 years ago that it was brought into the nation, most likely by Chinese immigration. It is a modification of Chinese noodle soup, and most versions still use Chinese noodles, yet it has become an all-time classic of Japanese cuisine.
Ramen soup, which is the most important portion of the meal and contains all of the tastes, is often made from pig or chicken stock with rich ingredients such onions, shiitake mushrooms, katsuobushi, or fish broth. There are also numerous vegetarian variants with broths made from mushrooms and vegetables.
