Gesine Bullock-Prado fell in love with the tastes and six distinctive seasons of Vermont after she left her Hollywood life there in 2004. The seasons of spring, summer, fall, and winter all have a place at this table, but a real Vermonter reserves additional room for the maple-forward mud season, which occurs just before spring when thawing ice creates muddy roads, and the stick season, which is characterized by barren trees and an abundance of gourds before winter.
