Jews have been present in Italy for thousands of years, however little is known about what they contributed to the country's food. Cooking alla Giudia presents not only the recipes but also the Jewish heritage of many well-known Italian meals and other delicious treats. The ultimate homage to the incredibly rich, yet still generally unappreciated, culinary history of the Italian Jews is cooking alla Giudia. Some of Italy's most well-known foods are Jewish in origin, including the Roman deep-fried artichokes (carciofi alla giudia), Venetian sarde in saor (sweet-and-sour sardines), Apulian orecchiette pasta, and Sicilian caponata. However, nothing is known about the Italian Jewish population's culinary heritage.
