"Food studies, previously popular, are now widely accepted. Academic writing on food and literary culture is a developing river in literary and cultural studies, although it is still a modest tributary to literature on African American food and eating. This gap is filled by Recipes for Respect, which sheds light on how foodways play a part in African American culture. Black Americans have been erroneously characterized as illiterate culinary geniuses, at least since the chefs in Uncle Tom's Cabin, if not earlier. This prejudice has persisted almost to the present day. In addressing this issue, Zafar draws attention to the lengthy heritage of educated African Americans in our country's culinary history as well as the literary and business methods for civil rights and respectability woven within the written records of eating, preparing food, and serving.
