Cooking Instructions: Stovetop Instructions: Bring 3 cups carrots and 1/2 cup water to boil. Cover and cook over medium 8-10 minutes, stirring occasionally, or until desired tenderness. Drain; season to taste. Microwave Instructions: Add 3 cups carrots and 3 tablespoons water to microwave-safe dish; cover and microwave on high 10-12 minutes, stirring occasionally, until tender. Drain; season to taste. Microwave ovens vary; adjust times as needed.

Once cooked, toss with garlic-herb butter and Parmesan cheese. Dip raw carrots in a cornmeal batter, then fry until golden brown. Pickle carrots in a pickling brine with your favorite spices. Throw a handful in a juicer or a smoothie for a treat.
