Yellow peppers are often referred to as Güero Chiles, which is Spanish for blonde or light-skinned. These chiles are waxy in texture, medium bodied, slightly sweet, and have a powerful taste similar to the Hungarian Wax.
These peppers grow more quickly than the other colored peppers because they are taken before they are fully mature. Since they are picked later, yellow, orange, and red peppers need more resources, which raises their price.
