Cast iron skillet or a 9-inch round cake pan should be heavily oiled and set aside. The oven should be preheated to 400 degrees.
In a medium mixing basin, combine the flour, cornmeal, sugar, salt, and baking powder. well blended with a whisk.
The milk, egg, and oil or butter should be added after making a well in the center of the dry ingredients. You only need to whisk the ingredients long enough to blend them and get rid of any remaining lumps.
Bake the cake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean. Pour the batter into the prepared pan.
Serve hot.
