The most important component of the meal, the ramen soup, contains all the flavors and is typically prepared with rich ingredients like onions, shiitake mushrooms, katsuobushi, or seafood broth in addition to pig or chicken stock. With broths made from veggies and mushrooms, there are also many vegetarian variants.
Ramen comes in three primary varieties:
Shoyu: a poultry or veggie broth that has been enhanced with soy sauce and tastes salty and flavorful
Shio: the broth is transparent, not as flavorful, and frequently enhanced with poultry, seafood, and seaweed.
Miso: To make a thicker, heartier soup, seafood stock is frequently added to a large amount of miso.
