Cuban sweet potatoes, also known as "boniatos" in Spanish, are a sweet potato cultivar that is popular in Cuban cuisine. Cuban sweet potatoes, like other sweet potatoes, are members of the Ipomoea batatas species, however they are a separate cultivar with distinguishing traits.
Their skin is normally light brown to pinkish, with white to off-white flesh. When compared to other sweet potato cultivars, the flesh is frequently drier and less sweet.
