A native American is the best person to depict small-town America. Erin French grew up working with her father at the griddle at their restaurant in Freedom, Maine, a town with a population of 719. She is a chef at The Lost Kitchen, a historic mill in the same town, where she runs it as a self-taught cook who learned to cook from cookbooks. Her food attracts residents and tourists from all over the world to a dining area that seems like an extension of her home kitchen.
