Spare ribs are the standard option for barbecues and get-togethers worldwide because they are big, meaty, have clearly defined bones, and have an abundance of delicious fat. They are also commonly regarded as having the most taste. The word "spare ribs" originated in Early Modern England and was derived from the Low German word "rippspeer," which described beef racks grilled on a rotating spit. The sternum bone, cartilage, and rib tips have been removed from St. Louis style spare ribs (also known as St. Louis cut spare ribs; see below).
