It is only made in copper vats to give it the distinctive, complex flavour that aficionados like. Each wheel is painstakingly rotated, softly brined, and brushed while Le Gruyére AOP patiently matured for a minimum of 5 months in the cavernous Emmi cellars. This produces an unmistakable flavor that is ideal for cheeseboards and cookery, with hints of candied walnuts, dried fruit, and spice.
