A cow's tail is called an oxtail. It was originally derived from the tail of an ox, but it is currently derived from the tail of a cow, regardless of gender. After skinning, the tail is divided into parts. Every part has a bony piece of flesh encircling the tail and a tailbone with some marrow in the middle.
