RED KIDNEY BEANS
How to Prepare: Sort and rinse the beans. Place them in a large pot. Add 3 cups of water for each cup (1/2 lb) of beans soak for 3 to 8 hours, as desired. Rinse and drain before cooking. Add 3 to 4 cups of water for each cup (1/2 lb) of already soaked beans. Season to taste, heat to boiling, reduce the heat, cover and simmer for 1 11/2 to 2 hours or until desired tenderness.
