How to prepare: Sort and rinse the peas. Place in a large pot. Add 2.5 to 3 cups of water for each cup (1/2 lb). (if extra softness is desired, soak for an hour). Season to taste, heat to boiling, reduce the heat, cover and simmer for 40 minutes or until desired tenderness.
