Three layers of Neapolitan ice cream—chocolate, strawberry, and vanilla—each of a different color and flavor are molded into a block and then cut into pieces. According to legend, in the 19th century, immigrants to the United States from southern Italy (specifically Naples) brought along the recipes popular in their homeland including Spumoni. Neapolitan ice-cream makers were famous in Paris at the beginning of the 19th century, especially Tortoni, creator of numerous ice-cream cakes. Chocolate, Vanilla, and Strawberry were perhaps the most often used local flavors at the time in the dish.
