The pig's foot is referred to in cuisine as a pig's trotter, pettitoe, or occasionally as a pig's foot. The slices saw a comeback in popularity in the late 2000s and are used in many different recipes throughout the world.
Pig feet are low in fat and highly high in protein, especially collagen found in the tendons and skin (the edible sections). For the health of joints and skin, this is excellent. There isn't much meat, but there is a lot of gelatin in the skin and bones, which gives the liquid body. It would be a pity not to crisp the skin if you're going to eat them whole.
