Canola plants have lovely tiny yellow blossoms that grow into pods that resemble pea pods. Each pod includes small black seeds that contain around 45% oil. Canola seeds are crushed after harvesting to liberate the oil contained within the seed. The oil is then processed further and packaged as canola oil. Canola oil is widely regarded as a "healthy" oil due to its low saturated fat content (7%). It is strong in monounsaturated fat (63%), just as olive oil.
