Originating from southern Mexico and Central America, black beans have been farmed for more than 7000 years. Black bean plants have trifoliate leaves with spade-shaped leaflets and trailing green vines, just as other bean kinds. As you can see, black beans are incredibly abundant in fiber and plant-based protein—nutrients that many Westernized diets lack but which significantly reduce the risk of chronic illness (1). Their protein has a 79% digestibility, which is quite high.
