Stove Top: In a large saucepan with tight fitting lid, bring 2 cups (16 oz) of water to a boil. Add 2 tbsp of olive oil or margarine (optional), then one package of Vigo Yellow Rice, stirring while boiling for one minute. Cover saucepan tightly. Reduce heat to simmer, cook for 20-25 minutes. Serve.
