Tips for Successful Canning
• Select quality ingredients at their peak of freshness.
• Examine jars for nicks and cracks. Discard any damaged jars.
• Leave enough headspace so food can well as it's heated without overflowing.
• Wipe rims of jar with a clean, damp cloth to ensure a tight seal.
• Allow processed jars to cool at room temperature 12 to 24 hours before checking the seal.
• To test the seal, press the center of the lid; then remove band and try to lift off lid with fingertips. If lid does not flex and you cannot lift it, then it has a good vacuum seal.
• Remember to clearly label and store jars in a cool, dry, dark place.
